Miss Maddie came up to me this afternoon after church... begging to make cookies. How could I resist such an opportunity?! I couldn't! However, I didn't have any chocolate chips, in which case I would've made chocolate chip cookies. I had just gotten in a magazine from Betty Crocker called "Cookies & Bars". I had "voted" on the cover months ago, and for my participation, I got this amazing magazine! So, both Maddie & I went to work trying to find the "perfect" cookie to make today. Most of the ones she wanted to make, I had to say "sorry charlie... nope!" simply b/c I didn't have an ingredient on hand.
What DID catch my eye, was the Caribbean Lime Coolers cookies! Oh.My.HEAVENS! These are OUT OF THIS WORLD!
Here are some pictures to document this wonderful occasion for Maddie & I as we set out to try our hand at this recipe. I just happened to have all ingredients on hand, which was hilarious in itself: coconut, lime juice, limes, Betty Crocker sugar cookie mix (from Christmas 1 1/2 years ago, bought in a huge box @ Sam's but never used). I mean, who has all those ingredients at once?!
yes, I'm a little crazy for letting her put them in the oven by herself, but she wanted to!
I said "OK, you've gotta start sometimes!"
Caribbean Lime Coolers
(makes 2 1/2 dozen)
1 pouch (1 lb 1.5 oz) Betty Crocker sugar cookie mix
1/2 c coconut
1 tbsp grated lime peel (about 1 lime)
3 tablespoons lime juice (or about 2 limes)
6 tbsp butter or margarine, melted
1 egg
1/4 c powdered sugar
1. Heat oven to 350 degrees. In large bowl, stir cookie mix, coconut, lime juice, lime peel, butter & egg until soft dough forms.
2. On ungreased cookie sheets (I used parchment paper), drop dough by level tablespoons 2 inches apart (or do like Maddie did to get 4 dozen: make them really really tiny)
3. Bake 9-13 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely, about 15 minutes.
4. With small strainer, sift powdered sugar over cooled cookies. Store covered @ room temperature.
Notes to add: if you let your 7 year old place powdered sugar on it, WATCH! Otherwise she'll put about an inch of sugar on it, and then proceed to sneeze while holding a cookie to eat, which'll send sugar ALL over her mother. And the floor. What a mess.....
